Recipe #1 Tomato Salmon Scramble

Here is a quick easy recipe that will take you no more than 10-15 minutes to prepare and cook. a nice variation if you are bored with your regular omelette. I have stolen this one from my favorite cooking book which you can check out here. I highly recommend it. 

Please note the image is not quite what it turns out to be as I could not find the exact one in the book. Looks much nicer in real life. 

 

 

Ingredients


140g Salmon
Olive Oil Cooking Spray
Fresh Spinach 2 cups
Small tomatoes (rough chopped) 2
Mushrooms (rough chopped) 1 cup
Egg Whites (6 large) 1 cup
Whole Omega 3 eggs 2
Salt 1/4 tsp
Pepper 1 pinch
Italian Parsely (rough chopped) 1 tbsp

 

 

Instructions


- Saute Salmon. 
- Preheat non-stick frying pan on medium heat and lightly coat with spray.
- Add spinach and saute for 30 secs
- Add tomatoes and mushrooms and saute for 3-4 minutes more.
- Remove from heat and set mixture aside.
- Whisk egg whites, eggs, salt and pepper together in mixing bowl
- Return empty frying pan to medium heat
- Lightly coat with spray and pour egg mixture into pan. 
- Stir constantly to break up the egg
- Once egg is cooked add the sauteed salon, parsely and vegetable mixture
- Enjoy breakfast
